Magic Rice |

|
It is an indigenous rice of Assam and famous for its zero cooking characteristics. Generally the farmers take this rice when they are busy in crop field. It is very often served in social and religious festivals in rural areas of Assam also.

Preparation of Magic Rice from Paddy:
|
The paddy is soaked in water for about 36 hours (two consecutive nights). |
|
The soaked paddy is parboiled keeping slightly under water till they start bursting. |
|
This preparation is taken expecting at least next two sunny days. |
|
The paddy is dried in sun for the whole day and the next half day may be required for drying. |
|
The paddy may be milled or hand pounded (Dheki) at least after one day of drying. |
|
Uses:
It is a Ready to Eat rice, only requires addition of warm water or warm milk and can be consumed with additives such as Banana Powder, Jaggery, Honey, or Potato Mash mixed with pickles. It is widely used as healthy breakfast in comparison to Corn Flakes.
t can also be packed for retailing in microwavable containers with added ingredients and flavours.
